Ingredients

  • 1/3 cup pumpkin puree
  • 1/3 cup coconut oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 2 tsp baking powder
  • 1/3 cup sweetener ((We used allulose))
  • 1 1/2 tsp pumpkin pie spice

Instructions

  • Preheat the oven to 350 degrees. Grease a baking pan and set aside.
  • In a bowl, beat the coconut oil with the allulose. Add the eggs and continue beating until incorporated, around 3 minutes.
  • Stir in the pumpkin pie spice, vanilla, and pumpkin puree.
  • Add the almond flour and baking powder. Continue beating until the mixture is fully incorporated.
  • Transfer the batter to the prepared cake pan.
  • Bake for 25 minutes or until done.
  • Let it cool down completely before slicing into bars
