Preheat the oven to 350°. Cover a cookie sheet with parchment paper and set aside.
Mix the mashed banana, coconut oil, coconut sugar, maple syrup, egg, cinnamon, and vanilla together until smooth.
Add the almond flour, baking soda and salt and stir to combine.
Let the dough rest for 5 minutes.
Scoop out 1 tbsp dough and place on the cookie sheet. Press down on each cookie with a fork.
Bake for 10-12 minutes until the cookies are golden brown on the edges.
Remove from the oven and let them cool down completely.
