Ingredients

  • 4 tbsp almond flour*
  • 1 tbsp coconut flour
  • 1/8 tsp baking soda
  • 1 tbsp almond milk
  • 1/4 tsp salt
  • 1 egg
  • 1 tsp coconut oil (melted)

Instructions

  • Mix all ingredients together.
  • Pour into a mug or small ramekin.
  • Microwave for 2 minutes. It will come right out of the mug or dish easily.
  • Slice, toast, add your favorite toppings, and enjoy!

Notes

*Use blanched almond flour if you want your English muffin to turn out white. We used natural almond flour, which is why it turned out so dark.
