Healthy Summer Salad

We love a fresh and light salad in the summer! As the weather gets warmer, we find ourselves reaching for things that are lighter and more refreshing. We love this healthy summer salad! It’s bright, fresh and goes great with pretty much anything.

We always thought salads needed to some type of lettuce base. We’ve typically built our salads like that, but we decided to try something different this time! Instead of using any lettuce or spinach, we decided to use a ton of veggies like zucchini, tomatoes, and avocado. Definitely loving this and will be doing it more since we love the toppings rather than the base of a salad anyway!

We also go back and forth on whether we like fruit in our salads, but we love how the strawberries added some sweetness! Another great option would be to use peaches. We’ve recently had some amazingly fresh and sweet peaches, so we think they would make a great addition to this healthy summer salad.

Also this dressing is so easy to make! We love light dressings like vinaigrettes. We’re planning on making a double batch from now on and keeping it in the fridge. It’s so light and delicious that it’ll go great with any salad during the summer.

Summer Salad

Ingredients

  • 1 cup zucchini (diced)
  • 1 cup cherry tomatoes (halved and quartered)
  • 1/2 cup strawberries (halved and quartered)
  • 1 avocado (diced)
  • 3 tbsp walnuts (chopped)

Mediterranean Dressing

  • 1/3 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp basil (chopped)
  • 1 tsp oregano
  • 3 tbsp lemon juice
  • 2 tbsp honey ((optional))

Instructions

  • Prepare the dressing: Place all the ingredients in a jar. Close with a lid and shake vigorously to combine. Store in an airtight container in the refrigerator for up to 1 week.
  • Drizzle the zucchini with around 1/4 cup vinaigrette and toss to combine. Let it marinate for 10 minutes.
  • Add the rest of the ingredients and toss to combine.
  • Sprinkle with salt and pepper.

Notes

You can also change the strawberries for peaches!
