Healthy Funfetti Birthday Cake

We love birthday cake everything! When we were kids, we used to make the Pillsbury funfetti cake all the time, but we wanted to make a healthy funfetti birthday cake since it was Grace’s birthday earlier this month.

We love using Simple Mills cake mixes because they’re easy, and we know how great they taste and how great the ingredients are. Since we don’t bake too often, we love how simple and easy this was to make. To add a fun twist to this recipe, Jo decided to add some bananas to make it a healthy banana funfetti birthday cake!

Healthy Funfetti Birthday Cake

Total Time: 30 Minutes
Makes: 8 in round cake or 2-3 9″ x 5″ loaves
Gluten-free, dairy-free

Ingredients:
1 box of Simple Mills vanilla cupcake & cake mix
3-4 very ripe bananas
3 eggs
1/3 cup vegetable or grapeseed oil
1/3 cup water
1 tbsp vanilla extract
Sprinkles

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Whisk eggs, oil, water, and vanilla extract.
  3. Mix in the Simple Mills cake mix.
  4. Mash bananas in a separate bowl. If your bananas are not ripe, put them in the oven for about 15 minutes at 350 degrees F.
  5. Mix in mashed bananas.
  6. Mix in sprinkles. (We initially used a gluten-free, vegan version we found at Whole Foods, but we ran out and had to add in some Betty Crocker ones.)
  7. Oil loaf pans or cake pan.
  8. Pour in batter.
  9. Bake in oven for 15-20 minutes or until a toothpick comes out clean.
