Low Carb Bagels

We seriously love bagels. Our fave is an everything bagel with cream cheese, lox, onions, and capers. But we know we can’t eat that everyday since it’s really heavy and eating a whole bagel will likely make our stomachs hurt. So, Grace decided to see if she could find an easy low carb bagel to make at home!

After searching online, we found a ton of recipes, but a lot of them had dairy (which Grace tries to minimize) or used yeast. We probably could have used a recipe with yeast, but they seem a lot harder and require more patience. We also found recipes that used xanthan gum, which we’ve never used before. So, we finally found an easy low carb bagel that was dairy-free and seemed totally doable from My PCOS Kitchen. Plus it was an everything bagel, which is our fave!

Dairy-Free Keto Bagels

Prep Time: 10 minutes
Cook Time: 23 minutes
Total Time: 33 minutes

Ingredients:

  • 5 tbsp boiling water
  • 1 egg yolk + 1 tsp water

Dry ingredients

  • 205g blanched almond flour (1.5 cup)
  • 30g coconut flour (1/4 cup)
  • 2 tbsp psyllium husk powder
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp Himalayan salt
  • 1 tsp roasted garlic
  • 1 tsp roasted onion

Wet Ingredients

  • 3 egg whites
  • 2 eggs
  • 4 tbsp refined coconut oil
  • 3 tbsp unsweetened almond milk
  • 1 tbsp apple cider vinegar

Everything Bagel Seasoning

  • 1 tsp black poppy seeds
  • 1 tsp black sesame seeds
  • 1 tsp white sesame seeds
  • 1 tsp roasted garlic
  • 1 tsp roasted onion
  • 1/2 tsp Himalayan salt

Instructions:

Get the directions from My PCOS Kitchen.

Make sure to use refined coconut oil instead of unrefined, since unrefined will have a much stronger coconut flavor. We only had refined coconut oil, but thankfully we like the taste of coconut. We also used Trader Joe’s Everything but the Bagel seasoning instead of making our own Everything Bagel seasoning.

Our first couple of bagels were definitely not the cutest. But we realized it’s easier to split them all into the equal 8 balls. Then we took each ball and carefully rolled them out into the logs. We would put them on the baking sheet, then shape them by sticking the ends together and making them look more like bagels.

We were honestly so surprised at how great these low carb bagels are. Recently, we’ve been having one for breakfast, slicing them in half and toasting them. We’ll top half with some Kite Hill chive cream cheese & lox and half with avocado & a runny egg. Such a great breakfast!
