Coconut Peppermint Bliss Ball Snowmen

Bliss balls are easy to make and almost impossible to mess up. You can throw a bunch of healthy ingredients into a food processor, and you’ll have a healthy snack in less than 15 minutes. We were inspired by Veggie Desserts holiday twist on bliss balls and had to make some to get into the holiday spirit!

While we don’t cook as much as we used to, on the rare occasion that we do, the dishes we make are simple and quick. With bliss balls, you can pretty much throw in any healthy ingredients you have at home.

You can change out any of these ingredients (just make sure you have a wet ingredient like almond milk, something sweet like maple syrup or almond butter, and any dry ingredients you want to put in) and even throw in some superfoods like chia seeds.

We recently made Spirulina Bliss Balls that were just as tasty and easy to make as these snowmen.

Coconut Peppermint Bliss Ball Snowmen

Total Time: 15 Minutes
Makes: 4 Snowmen (12 balls total)
Gluten-free, vegan, dairy-free

Ingredients:
For Balls
1 cup Unsweetened, shredded coconut, plus more for rolling
6 tbsp Almond flour (for nut-free option, substitute with Tigernut flour)
3 tbsp Coconut oil, melted
3 tbsp Almond milk (for nut-free option, substitute with coconut milk)
2 tbsp Maple syrup
1/2 tsp Peppermint extract

To Decorate
Cake pop sticks
Raisins
Dried apricots

Instructions:

  1. Put all bliss ball ingredients (shredded coconut, almond flour, coconut oil, almond milk, maple syrup, and peppermint extract) into a food processor or blender. Blend for a couple of minutes until ingredients start sticking together. Scrape down sides and blend until combined.
  2. Roll into individual balls. Cover each ball with unsweetened, shredded coconut. Put 3 balls onto a stick. If balls become too soft, throw them in the fridge for a bit.
  3. Cut raisins into small pieces for eyes, mouth, and buttons. Cut dried apricots into small triangles for nose.
  4. Decorate! And store into fridge.
